Meet Shelia
Shelia is a native Houstonian, born and raised in Texas, while Michael is a native of Lake Charles, Louisiana. Both lived in Texas for more than 30 years before moving to Lawrenceville, Georgia. Coming from Houston, where the summer is always scorching, shaved ice became their lifesaver.
In their first summer in Georgia back in 1998, they sought a shaved ice retailer to quench their thirst. To their dismay, they couldn’t find one anywhere in the Atlanta area. This inspired them to start their own business. In 2004, they purchased their first red shaved ice trailer, located about half a mile from their brick-and-mortar location.
Unfortunately, they were only open for about two months when the county deemed them as peddlers and asked them to move the trailer because it was on wheels. The only way they could remain in that location was to build a permanent structure. Their solution was to rent a space at 1495 Duluth Highway, where they opened the first gourmet shaved ice store in Lawrenceville, Georgia.
This shopping center location proved to be a great decision, as their loyal customers from the little red trailer remembered their name and continued to patronize the new spot. Thanks to their supportive neighbors in Lawrenceville, Duluth, and the surrounding cities within Gwinnett County, their dream became a reality. Their customers loved their shaved ice as much as they did.
Eventually, Shelia and Michael relocated the business to Crosby, Texas, where they restarted as a shaved ice store. After their first summer, they decided to remain open year-round. They expanded their menu to include fried wing baskets, fried fish, and shrimp baskets. As time passed, their offerings grew, and so did their business. They now serve full breakfast, lunch, and dinner.
In 2018, they changed their name from Three Sisters Gourmet Shaved Ice to Three Sisters Cajun Specialtz to reflect their full menu of both desserts and food.
